A dip in a lye bath before baking is the secret to making delicious and perfect pretzels.
Alkaline lye solution for production of pretzels.
Method of use:
1) Store proofed pretzel dough in the freezer until firm.
2) Dip frozen dough into lye solution, place on baking sheet.
3) Cut on top, sprinkle pretzel salt and bake without steam.
